We have a walker!

Morgan took 3 steps towards Auntie Megan back at Thanksgiving and has been cruising along the furniture/walls ever since..(well, she started cruising along furniture back in September) A couple of weeks ago, she started taking 2 or 3 steps and then throwing herself at the couch or the ottoman or one of us. Then we met my new mom-friend and her son who is 3 weeks older than Morgan (and who has been walking full time since 9 months) and Morgan saw that she too could walk.. And hasn't stopped since!

Looks like the lady that we were trying to dig out last night, got out .. not sure how far she went, or how she even got out..

Morgan's first Christmas :)

We decided in the interest of speeding up the unwrapping process, we'd do a time lapse video of it all..

Which was good, since it took us like an hour to unwrap everything since Morgan is a little new to this and all :)

So I give you, Morgan's First Christmas!



Not sure if anyone has seen on the news, but we're having a blizzard here in NY.

It started snowing lightly at about 11am today. I headed out about 11:30 to go return something at Gymboree, which was an hour subway ride away. We now have about a foot or more of snow outside. 12 hours later..

Something to note, we live on one of the busiest avenues in our area.. A main street that is normally ridiculously busy almost 24/7 .. Umm. snow plows? please?

Needless to say, we won't be going far from home for a few days. Thank god there is a small store across the street.

Morgan met Santa!

We went to see Santa at the St Matthews Mall in Louisville Kentucky yesterday.

She went right to Santa as if they were total bff's.. She smiled big for the camera, but then when we tried to get her to look more at the camera and smile, she got pouty lip..

So this is what we got!

Veggie lasagna

I found this recipe on Freshdirect.com, the website I use to buy groceries.

I tweaked it a bit by substituting zucchini for the onions, as I'm allergic to onions. I also did not saute the zucchini, I just put it on the layer raw as zucchini can get too mushy if overcooked.

I think it turned out pretty good, but I would've bought more sweet potatoes (2 medium sweet potatoes didn't make many slices!) and probably more mozzarella as I couldn't get it sliced thin enough to have a layer on top and my top noodles got VERY crunchy.

Will I make it again? Probably :)

1 pound lasagne noodles Extra olive oil for coating the pasta, brushing the potatoes, and greasing the dish

2 medium sweet potatoes, peeled and sliced into 1/4-inch thick rounds (1 1/2 pounds)

2 tablespoons butter

2 tablespoons olive oil 3 medium Spanish or other sweet onions, sliced into1/4-inch-thick rings

1 teaspoon sugar

1 large egg, lightly beaten

3 tablespoons chopped fresh basil leaves or 2 teaspoons dried basil

1 tablespoon chopped fresh oregano leaves or1 teaspoon dried oregano

2 cloves garlic, minced

1 teaspoon salt

3 cups ricotta cheese

1/2 cup mixed grated Parmesan and Romano cheeses

1/2 pound butternut squash, cooked and mashed

1 pound mozzarella cheese, preferably fresh, thinly sliced

Freshly ground black pepper

1. Cook the pasta until al dente, drain, and coat with enough oil to keep the noodles from sticking. Set aside.
2. Preheat the oven to 475°F.
3. Spread the sweet potatoes in one layer on a baking sheet. Drizzle a little oil (about 1/4 teaspoon) over the potatoes and turn to coat both sides. Bake for 15 minutes, until cooked and lightly golden. Remove and set aside. Reduce the oven heat to 375°F.
4. Melt the butter along with the 2 tablespoon oil in a large skillet. Stir in the onions and sugar and sauté over medium heat for 20 minutes, until soft and beginning to turn golden. Set aside.
5. Place the egg, basil, oregano, garlic, and salt in a large bowl and whisk together. Add the ricotta and grated cheeses and whisk to smooth. Add the squash and mix to blend well. Set aside.
6. To assemble the lasagne, lightly oil a 13 by 9-inch deep baking pan. Line the bottom with a layer of noodles. Spread some of the cheese and squash mixture over the noodles. Add a layer of sweet potatoes, then a layer of the onions. Top with a layer of mozzarella and sprinkle with black pepper to taste. Continue until all the ingredients are used and the top is a layer of onions lightly covered with mozzarella.
7. Bake for 1 1/2 hours, or until bubbly and golden across the top. Remove and cool for 5 minutes. Cut into squares and serve.

New York State of Mind

As many of you know, my husband Michael recently left Jive Software to venture out in to Designer land and make awesome designery things.

Well, recently Michael was offered a job by an awesome little startup called Carbonmade. They think he's pretty awesome and he likes them, and what they're doing with the web, quite a bit too..

So, being the amazing and supportive spouse that I am, told him to go for it!

That being said.. We're moving ...

Where to you ask? New York City!

What does that mean for me? Well, after 23 years in the Pacific Northwest and 3 and a half years at Jive, it's time to hang my hat up and move on.

This decision does not come lightly, as I love it here and love my family and friends that I have here. But, I'm also very excited to move on to new and exciting things and start a new adventurous chapter of our lives!

Morgan is even more excited, see for yourself!

I will miss everyone terribly and welcome all of you to come and visit and stay with us in the Big Apple!

I'll be in Portland through mid September and hope to see all of my friends before we leave.
